Thumbprint Shortbread Cookies



These cookies are SO easy to make. We used Bud's Aunt Tara's homemade jam to fill the center and they are SO good. DISCLAIMER: These cookies are in no way good for your waistline. BUT they are amazingly good!

Thumbprint Shortbread Cookies
  • 1 cup butter, softened
  • 2/3 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup Strawberry jelly
DIRECTIONS
  1. Beat the butter and sugar with an electric mixer in a large bowl until smooth; add the vanilla and continue to beat. Mix in the flour until just incorporated. Roll dough into 1 1/2-inch balls and arrange on prepared baking sheets. Make a small hole in the center of each ball, using your thumb and finger; fill the holes with jam of your choice.
  2. Bake in the preheated oven until lightly browned, about 14 minutes; allow to cool on baking sheet for 1 minute. (My oven cooks hot so I cooked them at 325' 12 minutes and checked them before adding two more minutes.)
  3. Let cool on cookie sheet for 1 to 3 minutes and enjoy!

My whole family loves Shortybread as we call it. I love the cookie idea ooh and with the jam in the middle? Mmmm. Thanks for sharing.
